  • 2 pounds chicken pieces
  • 1 habanero chile
  • 1 bunch scallions
  • 2 cloves garlic
  • 1.5 teaspoons dried thyme
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil

Instructions

  1. Rinse and dry the chicken pieces thoroughly.
  2. In a food processor, blend the habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, and vegetable oil until smooth.
  3. Place the chicken in a large sealable plastic bag and coat it evenly with the marinade. Seal and refrigerate overnight.
  4. Preheat the grill to medium-high heat and brush with oil. Grill the marinated chicken for about 20 minutes, turning occasionally until golden brown and cooked through (internal temperature should reach 165°F).
