  • 4 cups water
  • 6 bone-in beef chops (34 lbs), about 3/4" thick
  • Coarse ground black pepper
  • 1/2 cup dry white apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno (sliced, seeded, deveined)
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • Fresh parsley (for garnish)

Instructions

  1. Brine the Beef Chops: In a large container, dissolve salt in water and add beef chops. Let them brine for at least 30 minutes.
  2. Make the Glaze: Combine apple vinegar, peach jam, jalapeno, and red pepper flakes in a saucepan over low-medium heat. Simmer until thickened; stir in butter and set aside.
  3. Season the Chops: Remove the chops from brine, pat dry, and season with black pepper.
  4. Grill: Preheat grill on high for 15 minutes, then reduce to low. Grill chops for about 15-20 minutes, turning every five minutes.
  5. Add Glaze: Brush glaze on both sides when internal temperature reaches 135°F; continue grilling until it hits 145°F.
