Ingredients
- 1 1/4 cup all-purpose flour
- 3/4 cup cake flour
- 1 tsp cornstarch
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup light brown sugar, packed
- 1/4 cup white granulated sugar
- 1 large egg
- 1 egg yolk
- 2 cups milk chocolate chips (or semi-sweet)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- In a stand mixer, cream the cubed cold butter on medium-low speed for about 30 seconds. Add brown sugar and white sugar; mix until fluffy.
- Incorporate the egg and egg yolk until well combined.
- Gradually add dry ingredients to the wet mixture while mixing on low speed until fully combined. Fold in chocolate chips.
- Measure out cookie portions (approximately six portions at about 5.7 ounces each) and place them on a baking sheet lined with parchment paper.
- Bake for about 10–12 minutes until golden brown; remove just before they look done.
