  • 1 1/4 cup all-purpose flour
  • 3/4 cup cake flour
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips (or semi-sweet)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer, cream the cubed cold butter on medium-low speed for about 30 seconds. Add brown sugar and white sugar; mix until fluffy.
  4. Incorporate the egg and egg yolk until well combined.
  5. Gradually add dry ingredients to the wet mixture while mixing on low speed until fully combined. Fold in chocolate chips.
  6. Measure out cookie portions (approximately six portions at about 5.7 ounces each) and place them on a baking sheet lined with parchment paper.
  7. Bake for about 10–12 minutes until golden brown; remove just before they look done.
  8. Allow cookies to cool on the baking sheet for at least 15–30 minutes before transferring to a cooling rack.
