- 8 medium gold potatoes
- 2 tablespoons olive oil
- 3 garlic cloves
- 2 teaspoons crushed red pepper
- 1 cup chopped cilantro

Instructions
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- Toss peeled and cubed potatoes on the baking sheet with 1 tablespoon of olive oil and salt; roast for about 30 minutes until golden brown.
- While potatoes roast, heat remaining olive oil in a small pan over medium heat, then sauté minced garlic, 1 teaspoon crushed red pepper, and half of the cilantro until fragrant.
