  • 2 small leeks
  • 2 cups sliced mushrooms
  • 2 tablespoons butter
  • 4 eggs
  • 1/3 cup sour cream
  • 2/3 cup whole milk
  • 1 cup grated Gruyère cheese
  • Sea salt and fresh-ground pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 450°F (230°C). Bake the pie crust for about 10 minutes; let cool.
  2. Lower temperature to 375°F (190°C). Sauté leeks in butter until translucent; add mushrooms and cook until softened.
  3. In a bowl, whisk eggs with sour cream and milk. Stir in sautéed vegetables, Gruyère, salt, and pepper.
  4. Pour mixture into the crust placed on a baking sheet. Bake for 30-35 minutes until just set.
