Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup brown sugar
- 4 tbsp butter (melted)
- 32 oz cream cheese (softened)
- 1 cup white granulated sugar
- 3 eggs (room temperature)
- 1/2 cup heavy whipping cream
- 1/2 cup sour cream
- Zest and juice of 1 lemon
- 2 tbsp cornstarch
Instructions
- Prepare a springform pan by wrapping the outside in aluminum foil.
- For the crust, mix graham cracker crumbs and brown sugar with melted butter. Press into the bottom of the pan.
- For the filling, beat softened cream cheese and sugar until smooth. Add eggs one at a time, followed by heavy whipping cream, sour cream, cornstarch, lemon zest, and lemon juice.
- Pour the filling over the crust and bake at 325°F (160°C) for about 85 minutes or until slightly jiggly in the center.
- Cool at room temperature before refrigerating for at least 4 hours or overnight.
