  • 2 tablespoons olive oil
  • 4 cups romaine lettuce
  • 1 medium Hass avocado
  • 1 cup shredded cheese (Monterey Jack and cheddar blend)
  • 1/2 cup canned black beans
  • 1/2 cup canned corn
  • 3 to 4 tablespoons lime juice
  • Fresh cilantro leaves
  • 1.25-ounce packet taco seasoning (divided)
  • 1/2 cup mayonnaise (lite okay)
  • 1/4 cup sour cream (lite okay or plain Greek yogurt may be substituted)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with taco seasoning. Cook for about 5 minutes until done.
  2. On a large platter, layer romaine lettuce as the base, then add diced tomatoes, corn, black beans, avocado, cheese, crushed tortilla chips, and the cooked chicken.
  3. In a small bowl, whisk together mayonnaise, sour cream, lime juice, and remaining taco seasoning until smooth. Stir in minced cilantro.
  4. Drizzle the dressing generously over the salad just before serving.
