- 3 to 4 tablespoons lime juice
- Fresh cilantro leaves
- 1.25-ounce packet taco seasoning (divided)
- 1/2 cup mayonnaise (lite okay)
- 1/4 cup sour cream (lite okay or plain Greek yogurt may be substituted)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with taco seasoning. Cook for about 5 minutes until done.
- On a large platter, layer romaine lettuce as the base, then add diced tomatoes, corn, black beans, avocado, cheese, crushed tortilla chips, and the cooked chicken.
- In a small bowl, whisk together mayonnaise, sour cream, lime juice, and remaining taco seasoning until smooth. Stir in minced cilantro.
