  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup ditalini pasta (or other small pasta shape)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion, diced carrots, and celery until softened (about 5-7 minutes). Add minced garlic and cook for another minute.
  2. Stir in rinsed cannellini beans, undrained diced tomatoes, chicken broth, oregano, basil, and optional red pepper flakes. Bring to a simmer.
  3. Reduce heat and let the soup simmer for 20 minutes to meld flavors.
  4. Add ditalini pasta and cook until tender (10-12 minutes), stirring occasionally.
