- 1/2 cup brown sugar
- 1/3 cup maple syrup
- 2 large eggs
- 1 1/4 cups mashed bananas (about 3–4 bananas)
- 1 teaspoon vanilla extract
- 1/4 cup plain yogurt or sour cream
- 3/4 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, sift together the flour, baking soda, and salt; set aside.
- In a mixer bowl, beat the softened butter and brown sugar until fluffy. Add maple syrup and mix well.
- Incorporate eggs one at a time, mixing well after each addition. Then mix in the mashed bananas and vanilla extract.
- Gradually add half of the dry ingredients to the wet mixture, followed by the yogurt and then the remaining dry ingredients, mixing just until combined. Fold in nuts gently.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
- Remove from the oven and drizzle warm maple syrup over the top before cooling on a wire rack.
