  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt or sour cream
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together the flour, baking soda, and salt; set aside.
  3. In a mixer bowl, beat the softened butter and brown sugar until fluffy. Add maple syrup and mix well.
  4. Incorporate eggs one at a time, mixing well after each addition. Then mix in the mashed bananas and vanilla extract.
  5. Gradually add half of the dry ingredients to the wet mixture, followed by the yogurt and then the remaining dry ingredients, mixing just until combined. Fold in nuts gently.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes until a toothpick comes out clean.
  7. Remove from the oven and drizzle warm maple syrup over the top before cooling on a wire rack.
