  • 1 ¼ cups granulated sugar
  • 2 eggs
  • 2 tablespoons culinary matcha powder (sifted)
  • 1 tablespoon vanilla extract
  • 1 ⅓ cups milk
  • 2 ⅓ cups mochiko (sweet rice flour)
  • 1 ¼ teaspoons fine sea salt
  • For the ganache: 6 ounces white chocolate chips, ¼ cup heavy cream, 1 tablespoon culinary matcha powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In one bowl, sift together mochiko and sea salt. In another bowl, whisk matcha powder and sugar until well combined.
  3. Beat eggs until frothy in a separate bowl. Mix in melted butter and vanilla; gradually stir in milk until incorporated.
  4. Gently combine wet and dry ingredients with a rubber spatula until just mixed.
  5. Pour the batter into the prepared pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. For the ganache, heat heavy cream until simmering, then remove from heat and stir in white chocolate chips and matcha powder until smooth.
  7. Once brownies cool completely, pour ganache on top and allow to set before slicing into squares.
