  • 3/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 3 tbsp cubed unsalted butter (room temperature)
  • 1/2 cup sour cream (room temperature)
  • 2 tbsp vegetable or canola oil
  • 1 large egg (room temperature)
  • 1/4 cup whole milk (room temperature)
  • 1 tsp vanilla extract
  • 1/3 cup hot coffee
  • 1/3 cup unsweetened Dutch cocoa powder
  • 1.4 quart mint chocolate chip ice cream tub
  • 3/4 cup heavy whipping cream
  • 1 1/8 cup semi-sweet chocolate chips
  • 1 ¾ cup cake crumbs (from the cut top)
  • 1/4 cup + 1 tbsp semi-sweet chocolate chips
  • 2 tbsp heavy whipping cream
  • 1/2 cup semi-sweet chocolate bar (chopped, for dipping the truffles)

Instructions

  1. Preheat the oven to 350°F (180°C). Line an 8-inch metal square pan with parchment paper.
  2. In a stand mixer, combine dry ingredients. Mix in butter until crumbly.
  3. Add sour cream and vegetable oil; mix until combined.
  4. In another bowl, whisk egg, milk, and vanilla together, then add to the batter along with hot coffee mixed with cocoa powder.
  5. Pour batter into the prepared pan and bake for 28–35 minutes until a toothpick comes out clean.
  6. Cool the cake on a wire rack for about 20 minutes before removing it from the pan and chilling in the freezer.
  7. Prepare ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  8. Trim the cake top to create two layers; layer ganache between them in a lined pan.
  9. Spread softened mint chocolate chip ice cream on top before freezing for at least an hour.
  10. Finish with remaining ganache and freeze for four hours before slicing.
