  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon vegetable oil
  • 2 cups shredded cabbage
  • 1 cup sliced mushrooms
  • 1/2 cup shredded carrots
  • 4 green onions
  • 8 Mandarin pancakes or flour tortillas

Instructions

  1. In a small bowl, whisk together soy sauce and hoisin sauce.
  2. Heat oil in a large skillet over medium-high heat. Cook sliced chicken until golden brown, about 5-7 minutes; remove from skillet.
  3. In the same skillet, sauté minced garlic and grated ginger until fragrant.
  4. Add vegetables (cabbage, mushrooms, carrots, green onions) and stir-fry for 4-5 minutes until tender-crisp.
  5. Return chicken to the skillet with vegetables; pour in sauce mixture and stir well for another minute.
  6. Drizzle sesame oil over the mixture; season with salt and pepper to taste.
  7. Serve hot with warm pancakes or tortillas.
