  • 4 chicken thighs (bone-in, skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 garlic cloves (minced)
  • Juice and zest of 1 lemon
  • 1 onion (finely chopped)
  • 1 cup chicken broth
  • Fresh parsley and cilantro for garnish
  • Optional: 1 cup dried apricots or olives

Instructions

  1. In a mixing bowl, combine olive oil, cumin, coriander, cinnamon, smoked paprika, turmeric, salt, black pepper, minced garlic, lemon juice, and zest to create the marinade.
  2. Add chicken thighs to the marinade and ensure they are well coated. Cover and refrigerate for at least 1 hour or overnight.
  3. Preheat your oven to 400°F (200°C).
  4. In a large oven-safe skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  5. Sear the marinated chicken thighs skin-side down in the skillet until golden brown (about 5 minutes), then flip them over.
  6. Pour in the chicken broth until it covers half of the chicken. Add optional dried apricots or olives if desired.
  7. Transfer the skillet to the preheated oven and bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let rest before garnishing with parsley and cilantro.
