  • 4 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (about 110°F)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into 1-inch cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit until foamy (about 5 minutes).
  2. In another bowl, whisk flour and salt together. Gradually add to the yeast mixture until blended.
  3. Knead the dough by hand for about 8 minutes or using a stand mixer with a dough hook for about 5 minutes until smooth.
  4. Mix in chopped rosemary and grated Parmesan. Form into a ball and place in a greased bowl; cover and let rise for about an hour or until doubled in size.
  5. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  6. Punch down the risen dough, divide it into 8 pieces, flatten each piece, add mozzarella in the center, seal it, and shape into pretzels.
  7. Boil water with baking soda; briefly boil each pretzel for about 30 seconds. Drain on paper towels.
  8. Brush with melted butter and sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes until golden brown.
