Ingredients
- 14 graham cracker sheets (or 1 1/2 cups graham cracker crumbs)
- 2 Tbsp granulated sugar
- 1 tsp vanilla extract
- 8 Tbsp butter, melted
- 1 cup fresh cranberries
- 2 Tbsp fresh orange juice
- 2 tsp orange zest
- 2 Tbsp granulated sugar
- 1/2 tsp vanilla extract
- 8 oz cream cheese, softened to room temperature
- 1 1/2 cups heavy whipping cream
- 2 Tbsp fresh orange juice
- 1 Tbsp orange zest
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- Orange zest, if desired
- Sugared cranberries, if desired
- Candied orange peels, if desired
Instructions
- Prepare the crust by blending graham cracker crumbs, sugar, vanilla extract, and melted butter in a food processor. Press into a deep dish pie plate and set aside.
- In a medium saucepan, combine cranberries and fresh orange juice over medium heat. Add sugar and zest; simmer until thickened. Let cool.
- Whip heavy cream until soft peaks form; fold in orange juice, zest, powdered sugar, and vanilla extract.
- Mix cooled cranberry filling with cream cheese until smooth. Gently fold half of the whipped cream into this mixture.
- Spread cranberry filling over the crust and top with remaining whipped cream.
- Chill for at least 4 hours before serving.
