  • 2 Tbsp avocado oil or olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 2 lb boneless, skinless chicken breasts
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls
  • Fresh basil for garnish

Instructions

  2. In a bowl, whisk together balsamic vinegar, honey, avocado oil, minced garlic, Italian seasoning, salt, and pepper.
  3. In another bowl, mix grape tomatoes with mozzarella balls and season with salt and pepper.

  5. Sear chicken for 1-2 minutes on each side until golden brown.
  6. Pour balsamic sauce over the chicken and sprinkle with the tomato mixture.
  7. Bake uncovered for 18-23 minutes until chicken reaches an internal temperature of 165°F. Let rest for 5 minutes before serving.
