  • 1 ½ pounds boneless, skinless chicken breasts, cubed
  • 8 ounces dry orzo
  • 2 ½ cups low sodium chicken broth
  • 2 cups chopped fresh asparagus
  • 2 cups fresh spinach
  • ⅓ cup half and half or milk
  • ⅓ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • ½ cup diced yellow onion
  • 1 tablespoon minced garlic
  • 2 sprigs fresh thyme or 1/4 teaspoon dried thyme

Instructions

  1. In a bowl, combine cubed chicken with garlic powder, salt, black pepper, and red pepper flakes.
  2. Heat olive oil in a large high-sided pan over medium-high heat. Cook seasoned chicken for about 10-12 minutes until browned; remove from the pan.
  3. In the same pan, sauté asparagus in remaining olive oil for about 2 minutes until tender but crisp; set aside with chicken.
  4. Sauté diced onion until softened (about 3 minutes), then add orzo and minced garlic; toast for another 3 minutes.
  5. Pour in chicken broth and bring to a simmer; cover and cook for about 7 minutes until most liquid is absorbed.
  6. Stir in cooked chicken and asparagus, half and half, grated Parmesan, spinach, and thyme; heat through for another minute.
  7. Serve garnished with parsley and extra Parmesan.
