  • 1 cup onion
  • 1 cup celery
  • 1 cup carrot

  • 3 cans beef broth (14.5 ounces each)
  • 1 can diced tomatoes (14.5 ounces)
  • 1 can tomato sauce (8 ounces)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ditalini pasta
  • 1 can kidney beans (15.5 ounces)
  • 1 can cannellini beans (15.5 ounces)

Instructions

  1. Chop the onion, celery, carrots, and garlic.
  2. Rinse and drain the kidney and cannellini beans.
  3. In a large pot over medium-high heat, brown the ground beef until cooked through; drain excess fat if necessary.
  4. Add the chopped onion, celery, and carrots; cook for about 5 minutes until softened.
  5. Stir in the garlic and Italian seasoning; cook for an additional 1-2 minutes.
  6. Pour in beef broth, diced tomatoes, tomato sauce, salt, pepper, and ditalini pasta. Bring to a boil.
  7. Reduce heat to medium-low and let simmer for about 7 minutes before adding the beans.
  8. Continue cooking until pasta is tender, approximately another 5-8 minutes.
