  • 12 ounces turkey sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned.
  2. Stir in diced onion, green bell pepper, red bell pepper, celery, and minced garlic. Cook until softened.
  3. Add rice, Cajun seasoning, smoked paprika, dried thyme, salt, and pepper; mix well.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat to low, cover the pot, and simmer for about 20 minutes or until rice is tender.
  6. Gently fold in shrimp during the last 5 minutes of cooking.
  7. Once shrimp are pink and cooked through, serve garnished with fresh parsley.
