Ingredients

  • 1 lb pasta
  • 2 cups Italian dressing
  • 1 packet dry Italian dressing mix
  • 8 oz sun-dried tomatoes
  • 1 can pitted black olives, drained
  • 1 pint grape tomatoes, diced
  • 1 English cucumber, diced
  • 1 red onion, diced

Instructions

  1. Cook the pasta in liberally salted water according to package instructions until al dente. Drain well and transfer to a large mixing bowl.
  2. While the pasta is still warm, stir in both the Italian dressing and dry Italian dressing mix until the pasta is evenly coated.
  3. Drain and chop the sun-dried tomatoes, then add them to the pasta mixture. Cover and refrigerate overnight.
  4. Just before serving, fold in the black olives, grape tomatoes, cucumber, and red onion. Mix well to combine.
