Ingredients
- 3 large ripe peaches (peeled and chopped)
- 1 small white onion (chopped)
- 3–4 garlic cloves (finely chopped)
- 1.5 inch ginger (finely chopped)
- 1/4 cup + 1 tablespoon granulated sugar
- 1 tablespoon white vinegar
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon mustard seeds
- 1.25 teaspoon garam masala
- 3/4 teaspoon red chili powder (or to taste)
- 3/4 teaspoon salt (or to taste)
Instructions
- Heat oil in a large saucepan over medium heat.
- Add cumin, fennel, and mustard seeds; sauté until mustard seeds pop.
- Stir in garlic, ginger, and onion; cook for 3-4 minutes until onions soften.
- Add chopped peaches and sauté briefly.
- Mix in spices, vinegar, and sugar; stir well.
- Cook on low-medium heat for 5-7 minutes until peaches are soft.
- Remove from heat once desired consistency is reached; chutney will thicken as it cools.
