- ¾ cup granulated sugar

- 1 cup finely chopped fresh peaches
- 1½ cups heavy whipping cream (chilled)
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients alternately with milk to the butter mixture. Fold in chopped peaches.
- Fill cupcake liners three-quarters full and bake for 18–22 minutes or until a toothpick comes out clean. Cool completely before frosting.
- For frosting, beat chilled heavy cream, powdered sugar, and vanilla until stiff peaks form. Frost cooled cupcakes.
