  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 1 cup finely chopped fresh peaches
  • 1½ cups heavy whipping cream (chilled)
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
  3. Gradually add dry ingredients alternately with milk to the butter mixture. Fold in chopped peaches.
  4. Fill cupcake liners three-quarters full and bake for 18–22 minutes or until a toothpick comes out clean. Cool completely before frosting.
  5. For frosting, beat chilled heavy cream, powdered sugar, and vanilla until stiff peaks form. Frost cooled cupcakes.
