  • 1 lb ground chicken or turkey
  • 4 tbsp soy sauce
  • 3 tbsp oyster sauce
  • 6 oz rice noodles
  • 12 lettuce leaves (Boston or butter)
  • 1/2 cup chopped peanuts
  • Fresh ginger and garlic

Instructions

  1. Whisk together sauce ingredients: soy sauce, oyster sauce, sambal oelek, honey, ginger paste, lime juice, minced garlic, green onions, rice vinegar (optional), and cornstarch (optional).
  2. Combine ground chicken and chopped peanuts with 3/4 of the sauce; marinate for 15 minutes.
  3. Soak rice noodles in water until softened; drain and cut into smaller pieces.
  4. Heat sesame oil in a skillet over medium heat; add marinated chicken mixture and cook for about 10 minutes.
  5. Stir in soaked noodles; cook for an additional 5 minutes until heated through.
  6. Assemble by scooping the mixture into lettuce leaves and garnishing with cilantro, green onions, peanuts, and reserved sauce.
