  • Red gel food coloring
  • 1/4 cup coarse sugar or crushed peppermint candies

Instructions

  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Beat in the egg and then add vanilla and peppermint extracts until combined.
  4. Gradually mix in dry ingredients until just combined.
  5. Divide dough; color one half with red gel food coloring.
  6. Chill both dough halves in plastic wrap for at least 30 minutes.
  7. Roll out each colored dough into rectangles; layer them together and roll into a log.
  8. Chill the log again for at least two hours, then slice into rounds.
  9. Bake at 375°F (190°C) for 8 to 10 minutes until edges are lightly golden.
