Ingredients
- 4 lbs boneless, skinless chicken thighs
- ¼ cup olive oil
- 2 cloves garlic, minced or pasted
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- ½ teaspoon ground cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup brown sugar
- ½ cup ketchup
- 1 cup canned pineapple juice
- ½ cup light soy sauce
- 1 tablespoon Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 2 teaspoons Sriracha
- 1 can pineapple rings, drained
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a large bowl or zip-top bag, combine olive oil, garlic, paprika, ginger, cumin, salt, pepper, brown sugar, ketchup, pineapple juice, soy sauce, Worcestershire sauce, vinegar, and Sriracha to create the marinade.
- Reserve ½ cup of the marinade for basting later.
- Add chicken thighs to the remaining marinade and refrigerate for at least 2 hours or overnight.
- Preheat oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top.
- Arrange marinated chicken on the rack and bake for 15 minutes.
- Brush chicken with reserved marinade and bake for an additional 10–15 minutes until cooked through (internal temperature reaches 165°F).
- Broil for an extra 2–3 minutes to caramelize edges.
- Optionally add pineapple rings on top and broil for another minute until lightly charred.
