- 1 1/2 cups powdered sugar
- 2–3 tbsp reserved pineapple juice
- 1 tbsp melted butter for richness (optional)
- 1/4 tsp pineapple or vanilla extract for flavor boost (optional)
Instructions
- Preheat your oven to 325F (165C). Grease and flour a Bundt or tube pan.
- In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional pineapple extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the butter mixture alternating with sour cream until just mixed. Fold in drained crushed pineapple.
- Pour batter into the prepared pan and smooth the top. Bake for 75-85 minutes or until a toothpick inserted comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.
- For the glaze, mix powdered sugar with reserved pineapple juice until smooth; adjust consistency as needed.
