  • 1/2 cup sour cream (room temperature)
  • 1 1/2 cups powdered sugar
  • 23 tbsp reserved pineapple juice
  • 1 tbsp melted butter for richness (optional)
  • 1/4 tsp pineapple or vanilla extract for flavor boost (optional)

Instructions

  1. Preheat your oven to 325F (165C). Grease and flour a Bundt or tube pan.
  2. In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and optional pineapple extract.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the butter mixture alternating with sour cream until just mixed. Fold in drained crushed pineapple.
  4. Pour batter into the prepared pan and smooth the top. Bake for 75-85 minutes or until a toothpick inserted comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.
  5. For the glaze, mix powdered sugar with reserved pineapple juice until smooth; adjust consistency as needed.
  6. Once cooled, drizzle glaze over the cake and let set before slicing.
