  • 1 firm pear, peeled and cored
  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie (200250 g)
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Pinch of flaky salt or chopped rosemary (optional)

Instructions

  1. In a small pot, combine apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves. Add the peeled pear and simmer gently for 20-25 minutes until tender. Let cool in the liquid.
  2. Slice the brie in half horizontally and place the cooled pear upright on the bottom half. Cover with the top half of brie and press gently to seal.
  3. Roll out the puff pastry and wrap it around the brie and pear securely. Seal edges underneath and place seam-side down on a baking sheet lined with parchment paper.
  4. Preheat oven to 200°C (392°F). Brush with beaten egg wash and sprinkle with salt or rosemary if desired. Bake for 20-25 minutes until golden brown. Allow resting for 5 minutes before slicing.
