Ingredients
- 1 firm pear, peeled and cored
- 200 ml apple vinegar
- 2 tbsp brown sugar
- Zest of orange
- 1 cinnamon stick
- 2 whole cloves
- 1 wheel brie (200–250 g)
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
- Pinch of flaky salt or chopped rosemary (optional)
Instructions
- In a small pot, combine apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves. Add the peeled pear and simmer gently for 20-25 minutes until tender. Let cool in the liquid.
- Slice the brie in half horizontally and place the cooled pear upright on the bottom half. Cover with the top half of brie and press gently to seal.
- Roll out the puff pastry and wrap it around the brie and pear securely. Seal edges underneath and place seam-side down on a baking sheet lined with parchment paper.
- Preheat oven to 200°C (392°F). Brush with beaten egg wash and sprinkle with salt or rosemary if desired. Bake for 20-25 minutes until golden brown. Allow resting for 5 minutes before slicing.
