  • 1/3 cup sofrito
  • ¼ cup chopped cilantro
  • 8 cloves garlic (crushed)
  • 1 tablespoon oil (divided)
  • 10 dashes Maggi liquid seasoning (or 2 teaspoons salt)
  • 1 teaspoon chicken bouillon seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon adobo (all purpose seasoning)
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cumin
  • 1/2 red bell pepper (sliced thin)
  • 1/2 green bell pepper (sliced thin)
  • 1/2 red onion (sliced thin)
  • 3 bay leaves
  • 12 cups water
  • Freshly chopped cilantro (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. Marinate the steak: In a large bowl, combine sliced flank steak, cilantro, sofrito, garlic, oil, Maggi seasoning, chicken bouillon, oregano, adobo seasoning, black pepper, and cumin. Mix well and marinate for at least one hour or overnight for best flavor.
  2. Sauté the steak: Heat remaining oil in a large pot over medium-high heat. Add marinated steak and sauté for about 5-7 minutes until juices are released. Stir in sliced bell peppers and onions.
  3. Cook until tender: Pour enough water to cover the meat completely. Add bay leaves and bring to a simmer. Cook for about 15-20 minutes until water reduces by half, then cover and simmer on low for an additional hour until tender.
