  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press half of the mixture into the bottom of the prepared dish to form a base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
  5. Pour the pumpkin filling over the crumble base evenly.
  6. Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for 35–40 minutes or until golden brown. Let cool before slicing.
