- 1 1/2 cups rolled oats
- 1 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups pumpkin puree
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
- Press half of the mixture into the bottom of the prepared dish to form a base layer.
- In another bowl, whisk together pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla until smooth.
- Pour the pumpkin filling over the crumble base evenly.
- Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
- Bake for 35–40 minutes or until golden brown. Let cool before slicing.
