  • 2 to 3 tsp chili oil
  • 1 tbsp chopped cilantro (fresh)
  • 1 tbsp sliced scallion greens
  • 1 tbsp crunchy garlic
  • 1 bag frozen vegan dumplings (12 to 15 pieces)

Instructions

  1. Gather and chop all ingredients: diced onion, scallions, and cremini mushrooms; mince the garlic.
  2. In a large pot, heat avocado oil over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  3. Add diced onion and chopped mushrooms; cook until softened (about 5 minutes).
  4. Pour in vegetable broth and stir in soy sauce, salt, sugar, and red Thai curry paste; bring to a gentle boil.
  5. Reduce heat to low and mix in coconut milk; simmer gently for 5 minutes.
  6. Add frozen dumplings directly into the soup; cook according to package instructions (usually 5-7 minutes).
  7. Finish by adding chili oil, chopped cilantro, sliced scallion greens, and crunchy garlic before serving.
