Instructions
- In a stand mixer with a dough hook, combine bread flour, sugar, salt, instant yeast, and warm milk and cream. Add the egg and knead on low speed for about 10 minutes until the dough is tacky.
- Cover and let the dough rise for 2 hours until doubled in size.
- Divide the dough into nine equal pieces and shape each into a ball.
- Flatten each ball into a circle, place red bean paste in the center, fold edges to seal, and shape into smooth balls.
- Place buns seam side down on a parchment-lined baking sheet and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Brush buns with an egg wash and sprinkle sesame seeds before baking for about 20 minutes until golden brown.
