Ingredients

  • 1 pound Brussels sprouts (halved)
  • ½ tablespoon extra virgin olive oil (for roasting)
  • 2 tablespoons extra virgin olive oil (for dressing)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon orange juice
  • 2 teaspoons maple syrup
  • 2 teaspoons mustard
  • ½ teaspoon salt
  • 2 twists black pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper if desired.
  2. Trim the woody stems of the Brussels sprouts and remove any brown leaves. Rinse under cold water and pat dry.
  3. Halve each sprout lengthwise, then toss in a bowl with ½ tablespoon olive oil, salt, and black pepper until evenly coated.
  4. Spread the sprouts on the baking sheet in a single layer and roast for 20-25 minutes, until charred outside and tender inside.
  5. For the dressing, combine 2 tablespoons olive oil, apple cider vinegar, orange juice, maple syrup, mustard, salt, and black pepper in a small jar. Shake well or whisk until smooth.
  6. Serve the roasted Brussels sprouts on a platter drizzled with the dressing.
