Ingredients

  • 4 thick slices sourdough bread
  • Olive oil, for brushing
  • 2 burrata balls (room temperature)
  • 300g (2 cups) fresh dark cherries, pitted
  • 2 tbsp balsamic vinegar
  • 2 tsp honey or maple syrup
  • Flaky sea salt, to finish

Instructions

  1. Preheat your oven to 200C (400F).
  2. In a baking dish, toss the pitted cherries with balsamic vinegar and honey or maple syrup. Roast for 15-18 minutes until soft and syrupy.
  3. While the cherries roast, brush each slice of sourdough with olive oil and toast them in a skillet over medium heat until golden brown. Sprinkle with flaky sea salt immediately after toasting.
  4. Assemble by placing warm toasted bread on serving plates, topping each slice with half a burrata ball, and spooning the roasted cherries along with their juices over the top.
  5. Drizzle extra balsamic on each toast and garnish with fresh herbs if desired. Serve immediately.
