Ingredients
- 3 medium-sized tomatoes
- 2 habanero peppers
- 1 red bell pepper
- 2 jalapeno peppers
- 1 medium-sized mango (peeled and chopped)
- Juice from 1 lime
- 3 tablespoons fresh chopped cilantro
- 1 teaspoon olive oil
- Salt to taste
Instructions
- Preheat your oven to broil.
- Halve the tomatoes and place them on a lightly oiled baking sheet. Remove stems from habaneros and jalapenos, slice in half lengthwise, and add them to the baking sheet along with quartered red bell pepper.
- Broil for about 15 minutes until slightly charred.
- Meanwhile, heat olive oil in a sauté pan over medium heat and sauté chopped mango for about 6-8 minutes until browned.
- After removing vegetables from the oven, cool them down before processing.
- Peel off skins from tomatoes, jalapenos, and bell peppers, then combine all roasted ingredients in a food processor with sautéed mango, lime juice, cilantro, and salt.
- Blend until smooth and refrigerate for at least 4 hours before serving.
