  • lbs sweet potatoes
  • 2 tablespoons olive oil
  • 2 cups cooked quinoa
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can whole kernel corn, rinsed and drained
  • 1 small red onion, chopped

Instructions
