Ingredients
- 2 large Yukon potatoes
- 2 medium sweet potatoes
- 2 medium beets
- 1 onion
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 2 cups sharp cheddar cheese (shredded)
- 1/2 cup parmesan cheese (grated)
Instructions
- Preheat oven to 350°F (175°C).
- Peel and thinly slice the Yukon potatoes, sweet potatoes, beets, and onion.
- In a pot over medium heat, melt butter, whisk in flour, then gradually add milk until thickened. Stir in cheddar cheese and dijon mustard until melted.
- Layer the sliced onions at the bottom of a cast iron skillet or baking dish, followed by vertically arranged layers of root vegetables.
- Pour cheese sauce evenly over the top and sprinkle with parmesan.
- Cover with foil and bake for 30 minutes; then remove foil and continue baking for another 20-30 minutes until golden brown.
