- 6 fresh lemons (plus extra for garnish)
- 1 cup granulated sugar
- 6 cups water (divided)
- 6 sprigs fresh rosemary
Instructions
- Zest all lemons into a bowl; set aside.
- In a medium saucepan, mix 1 cup of water, lemon zest, sugar, and 3 rosemary sprigs. Heat until just below simmering, then steep for 20 minutes.
- Strain the syrup through a fine mesh sieve and cool completely.
- Juice the lemons to yield at least 1 cup of juice.
- In a large pitcher, combine lemon juice and cooled syrup; add remaining cold water to taste and stir well.
- Serve over ice, garnished with lemon slices and rosemary sprigs.
