  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 3 medium potatoes, diced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 2 tbsp all-purpose flour, optional (for thickening)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear beef cubes until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Return beef to the pot with diced potatoes and stir in tomato paste, beef broth, thyme, rosemary, salt, and pepper.
  4. Bring to a boil; then reduce heat to low and cover to simmer for 1.5 to 2 hours until beef is tender.
  5. Serve hot in hollowed-out crusty bread bowls.
