  • 16 ounces mild Italian sausage
  • 1 medium onion, chopped
  • 1 & 1/2 cups celery, chopped
  • 1 & 1/2 cups carrots, chopped
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons garlic, minced
  • 1 tablespoon dried oregano
  • 1 can (15 ounces) Italian style diced tomatoes
  • 5 cups chicken broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) red kidney beans, drained and rinsed
  • 1 cup zucchini, chopped
  • 1 cup yellow squash, chopped
  • 1/2 cup dry ditalini pasta
  • 2 cups baby spinach

Instructions

  1. In a large soup pot over medium heat, brown the Italian sausage until cooked through. Drain excess fat.
  2. Add chopped onion, celery, carrots, garlic, tomato paste, and oregano to the pot; sauté for about five minutes until fragrant.
  3. Pour in diced tomatoes and chicken broth; bring to a boil.
  4. Reduce heat to simmer for about 30–45 minutes until vegetables are tender.
  5. Stir in the beans, zucchini, and yellow squash; bring back to a boil then reduce to simmer again.
  6. Add ditalini pasta and cook for an additional ten minutes until tender.
  7. Turn off heat and stir in baby spinach; let wilt for five minutes before serving.
