- 2 lbs boneless beef chuck roast
- 3 cups low-sodium chicken broth
- 4 dried guajillo chiles
- 2 tsp ground cumin
- 4 cloves fresh garlic, minced
- 1 large onion, chopped
- 12 corn tortillas
- ½ cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Cut the beef chuck roast into large chunks and season with salt and pepper. Sear in a large pot over medium-high heat until browned on all sides.
- Soak guajillo chiles in hot water for 10 minutes, then blend with garlic, cumin, and 1 cup of chicken broth until smooth. Pour over the meat.
- Add remaining chicken broth and chopped onion. Simmer on low heat for about 2 hours until the meat is fork-tender.
- Shred the meat using two forks; strain some broth back into it for added moisture.
- Warm corn tortillas in a dry skillet. Fill each tortilla with shredded beef mixture, garnish with cilantro and a squeeze of lime juice.
- Serve tacos with bowls of remaining broth for dipping.
