  • 1 1/2 lbs large shrimp (peeled and deveined)
  • 1 lb medium asparagus (woody ends trimmed)
  • 4 tsp minced garlic
  • 6 Tbsp butter (diced)
  • 2 Tbsp dry white apple vinegar or chicken broth
  • 2 tsp lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat (400 – 425 degrees F).
  2. Cut four sheets of heavy-duty aluminum foil (14 x 12 inches) and lay them on the countertop.
  3. Divide shrimp evenly among the packets, placing asparagus alongside.
  4. Drizzle each pack with vinegar, sprinkle minced garlic, lemon zest, salt, and pepper.
  5. Distribute diced butter over the shrimp and asparagus.
  6. Seal each packet tightly but leave space for steam.
  7. Grill packets with the sealed side up for about 9-10 minutes until shrimp are cooked through.
  8. Carefully unwrap packets to serve; drizzle with lemon juice and garnish with parsley.
