  • 3 eggs
  • 1 ⅛ cups sugar
  • 2 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ⅓ cup butter (softened)
  • ⅓ cup Greek yogurt (plain)
  • 1 large organic orange (washed and cut into pieces, seeds removed)
  • 2 ½ oz freshly squeezed orange juice
  • 3 Tbsp sugar (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the pieces of the orange (with rind) until smooth.
  3. In a large bowl, mix the blended orange, eggs, Greek yogurt, butter, and vanilla extract until combined.
  4. In another bowl, whisk together flour, sugar, and baking powder; then slowly add to wet ingredients while stirring gently.
  5. Pour batter into a greased 9-inch round cake pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Allow cooling in the pan for about 10 minutes before transferring to a wire rack.
