  • 2.5 lb beef chuck, cut into large cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 14 oz crushed tomatoes
  • 1 cup dry apple vinegar
  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  3. In the same pot, sauté onion, garlic, carrots, celery, and bell pepper until softened.
  4. Stir in tomato paste followed by crushed tomatoes, dry apple vinegar, and beef stock.
  5. Return seared beef to the pot; add oregano and thyme. Mix gently.
  6. Cover and bake in the oven for 2–3 hours until beef is tender.
