Ingredients
- 2.5 lb beef chuck, cut into large cubes
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 4 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, chopped
- 1 tablespoon tomato paste
- 14 oz crushed tomatoes
- 1 cup dry apple vinegar
- 1 cup beef stock
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 325°F (160°C).
- Heat olive oil in a Dutch oven over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
- In the same pot, sauté onion, garlic, carrots, celery, and bell pepper until softened.
- Stir in tomato paste followed by crushed tomatoes, dry apple vinegar, and beef stock.
- Return seared beef to the pot; add oregano and thyme. Mix gently.
- Cover and bake in the oven for 2–3 hours until beef is tender.
