  • 1 poblano pepper or jalapeno pepper, diced
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 2 tsp cumin
  • 6 cups chicken broth
  • 2 cups frozen corn
  • 1 lb chicken breast
  • 8 oz cream cheese or crème fraîche
  • 2 med russet potatoes, peeled and diced
  • 1 chipotle pepper in adobo sauce, diced
  • 2 tbsp adobo sauce
  • 1 tbsp olive oil or avocado oil

Instructions

  1. In a large sauté pan over medium heat, add oil and sauté the onion, pepper, and garlic until softened (about 3 minutes). Stir in chili powder and cumin before transferring to the slow cooker.
  2. Add frozen corn, diced potatoes, chipotle pepper, adobo sauce, chicken breast, and chicken broth into the slow cooker; stir well.
  3. Cook on low for 6–8 hours until the chicken is fully cooked.
  4. In the last 30 minutes of cooking, stir in cream cheese until melted.
  5. Serve hot with your choice of toppings like crumbled turkey bacon or cotija cheese.
