- 250g whole milk
- 50g granulated sugar
- 2 1/4 tsp active dried yeast
- 2 large eggs
- 565g all-purpose flour
- 850g diced apples
- 100g unsalted butter (for dough)
- 30g unsalted butter (for filling)
- 125g pecan halves
- 190g unsalted butter (for frosting)
- 225g cream cheese
- 280g brown sugar
- 2 Tbsp plus 1 tsp ground cinnamon
- 1/8 tsp kosher salt
- 250g powdered sugar
- 1–2 Tbsp heavy whipping cream
Instructions
- Combine lukewarm milk and sugar in a mixing bowl; add yeast and let sit until foamy.
- Mix in eggs, salt, flour, and butter; knead until smooth. Let rise in a greased bowl until doubled (about 1 hour).
- Prepare the apple filling by sautéing diced apples with butter, sugar, cinnamon, and cornstarch until soft.
- Roll out the dough into a rectangle; spread softened butter over it and sprinkle with cinnamon-sugar mixture.
- Add the apple filling and pecans; roll tightly and cut into pieces. Allow to rise again for about 30 minutes.
- Bake at 350°F (175°C) for 25–30 minutes until golden brown.
- For frosting, beat together cream cheese and butter; mix in powdered sugar and cream to desired consistency.
