  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs
  • 565g all-purpose flour
  • 850g diced apples
  • 100g unsalted butter (for dough)
  • 30g unsalted butter (for filling)
  • 125g pecan halves
  • 190g unsalted butter (for frosting)
  • 225g cream cheese
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 250g powdered sugar
  • 12 Tbsp heavy whipping cream

Instructions

  1. Combine lukewarm milk and sugar in a mixing bowl; add yeast and let sit until foamy.
  2. Mix in eggs, salt, flour, and butter; knead until smooth. Let rise in a greased bowl until doubled (about 1 hour).
  3. Prepare the apple filling by sautéing diced apples with butter, sugar, cinnamon, and cornstarch until soft.
  4. Roll out the dough into a rectangle; spread softened butter over it and sprinkle with cinnamon-sugar mixture.
  5. Add the apple filling and pecans; roll tightly and cut into pieces. Allow to rise again for about 30 minutes.
  6. Bake at 350°F (175°C) for 25–30 minutes until golden brown.
  7. For frosting, beat together cream cheese and butter; mix in powdered sugar and cream to desired consistency.
