  • 4 cups vegetable broth
  • 4 large potatoes, peeled and cut into large pieces

  • 1 tbsp fresh chopped parsley
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Gather all ingredients. Dice the onion and mince the garlic cloves.
  2. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic for an additional minute.
  3. Pour in vegetable broth and bring to a gentle boil. Add potato pieces and half of the salt (1/2 tsp). Reduce heat to low, cover, and simmer until potatoes are tender (approximately 20 minutes).
  4. Remove from heat and blend the soup until smooth using an immersion blender or by carefully transferring batches to a conventional blender.
  5. Stir in roasted garlic, remaining salt (1/2 tsp), black pepper, and chopped parsley.
  6. Serve hot with toppings such as croutons, grated cheese, and fresh parsley.
