  • 1/4 cup extra virgin olive oil
  • 1 onion, diced
  • 1 bell pepper, diced (½ red and ½ green)
  • 4 cloves garlic
  • 3 roma tomatoes, finely diced (or 8 oz. tomato sauce)
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 pinch saffron threads
  • Salt and pepper to taste
  • 1/4 cup white apple vinegar
  • 4 boneless, skinless chicken thighs, cut into pieces
  • 2 cups Spanish rice
  • 5 cups chicken broth
  • 1/2 cup frozen peas
  • 1/2 lb jumbo shrimp or prawns (peeled, tail on)
  • 1/2 lb mussels (cleaned)
  • 8 oz calamari rings
  • Lemon wedges for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the onion, bell peppers, and garlic until translucent.
  2. Add chopped tomatoes, bay leaf, paprika, saffron, salt, and pepper; cook for about five minutes.
  3. Stir in white apple vinegar and let it cook for another ten minutes.
  4. Add chicken pieces and two tablespoons of parsley; mix in rice carefully for one minute.
  5. Slowly pour in chicken broth without stirring; bring to a boil then reduce heat to medium-low.
  6. Cook uncovered for approximately 15–18 minutes before adding shrimp, mussels, calamari, and peas; continue cooking for an additional five minutes.
  7. Once most liquid is absorbed, cover the paella with foil or a lid and let it rest for ten minutes before serving.
  8. Garnish with fresh parsley and lemon wedges.
