Ingredients

  • 12 hard-boiled eggs, peeled & halved lengthwise
  • 2 tbsp mayonnaise
  • 1 1/2 tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 1 1/2 tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1 1/2 cups flour
  • 2 large eggs, beaten
  • 2 cups Panko breadcrumbs
  • 2 1/2 tsp gumbo file powder
  • Salt & pepper, to taste

Instructions

  1. Boil the eggs for 9-12 minutes until fully cooked. Cool, peel, and halve them lengthwise.
  2. Scoop out the yolks into a mixing bowl and mix with mayonnaise, relish, mustard, Cajun seasoning, and hot sauce until smooth. Season with salt and pepper.
  3. Spoon or pipe the yolk mixture back into the egg whites.
  4. Coat filled egg halves in flour, dip in beaten eggs, then coat with Panko breadcrumbs.
  5. Fry in heated oil over medium heat until golden brown (2-3 minutes per side). Drain on paper towels.
  6. Serve warm or at room temperature.
