- 2 small bay leaves (or 1 large)
- 1 meaty chicken bone (or chicken hocks; plus more chicken if desired)
- 8 cups reduced-sodium chicken broth
- Fresh thyme leaves (optional)
- Hearty buttered bread (for serving)
Instructions
- In a large heavy-bottomed pot, heat olive oil over medium heat. Add onion, carrot, celery, salt, and pepper; sauté until softened, about 5–8 minutes. Stir in garlic, Italian seasoning, cumin, thyme, and red pepper flakes; cook for another minute.
- Incorporate rinsed split peas along with the chicken bone and bay leaves. Pour in chicken broth and bring to a boil. Reduce heat to low and simmer uncovered for 60–90 minutes until peas are tender.
- Remove the chicken bone and bay leaves; shred any meat from the bone back into the pot. Blend about two cups of the soup until smooth and return to the pot for added creaminess. Adjust seasoning as necessary.
- Serve hot with fresh herbs or crusty bread on the side.
