  • 1/3 cup all-purpose flour (for crumb topping)
  • 3 tablespoons granulated sugar (for crumb topping)
  • 3 tablespoons unsalted butter, melted (for crumb topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners or grease it.
  2. In a small bowl, mix softened cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth; set aside.
  3. In a large bowl, whisk together all-purpose flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, beat eggs with milk and vegetable oil until well combined.
  5. Gently combine wet and dry mixtures without over-mixing.
  6. Toss diced strawberries with flour to coat before folding them into the batter.
  7. Spoon batter into muffin cups halfway full; add cream cheese filling and cover with remaining batter.
